2010 Gravity Pinot Noir
The warm summer and fall of 2010 had us into harvest mode earlier than normal and all of our Pinot Noir grapes were in the winery by mid-September.Â The grapes were hand sorted, gently de-stemmed and left as whole berries as they were gravity fed to open top fermentation tanks. They then spent between 3 and 6 days cold soaking to extract colour, flavours and aromatics from the skins before fermentation with predominantly wild yeast.Â During the course of fermentation the tanks were hand plunged four times a day to further the extraction of colour and flavour from the skins.Â Post fermentation saw the wine gravity-flow transferred off the skins into 100% French oak barrels with 30% being first fill.Â Â Aging then took place from October through to July, at which time the Pinot barrels most representative of the Gravity style were chosen for the final blend.Â No finings were added to this wine.Â Bottling Date: 29th August 2011
2010 was a year of ripe fruit flavours for our wines, and possibly the wine that shows this most is our 2010 Gravity. It also shows great varietal typicality, and the array of aromas and flavours point immediately to Pinot Noir. The nose has beets, black cherries, earthiness, and sweet spice derived from its time in oak. The palate is smooth and weighty, with fine but present tannin rounding it out. Sweet cherry and berry flavours are present, and dried herbs add yet another dimension.
