2007 Sparkling Brut

The 2007 Sparkling Brut is a blend of 67% Pinot Noir and 33% Chardonnay, picked between the 5th and 13th of September 2007. All fruit was gently whole bunch pressed before being cold settled prior to fermentation. Fermentation took place in stainless steel tanks, and immediately after fermentation the wine was racked to old neutral barrels where it aged for 6 months. Following this the barrels were blended, filtered and re-inoculated prior to bottling. Secondary fermentation took place in the bottle, and the wine remained on yeast lees for 3 years before disgorging and dosage in June 2011.

Tasting Notes

Following in the style of our first Sparkling Brut, the 2007 is a lively wine with a great backbone of acidity. The citrus and berry fruit aromas and flavours, combined with a stoney minerality and developed bread and biscuit characters, make for a seriously tasty glass of wine. The three years yeast contact in the bottle has helped to shape a wine of great complexity and a rich, creamy texture.
