2007 Reserve Chardonnay (07014) BEST WHITE, CUVEE 2010
The 2007 Reserve Chardonnay is a blend of two clones, 76 and 95, grown in the vineyard surrounding our winery. The grapes were hand picked in late September and early October 2007. Each vineyard block and individual clone was processed separately. Hand sorting of all grapes ensured only the best bunches made it into the wine. The sorted grapes were gently whole bunch pressed and the juice was left to settle for two days in tank. The clear juice was then transferred by gravity flow to French oak barrels, 30% of which were new.
Fermentation took place in barrel with a mix of wild fermentation and cultured yeasts being used. All barrels underwent a full Malolactic fermentation. The barrels were stirred weekly for 6 months to develop a creamy flavour and texture from the yeast lees.
The Reserve Chardonnay will only be made in exceptional vintages, as was the case in 2007. This wine represents the very best that this vintage has to offer. In mid July, the finest Chardonnay barrels were hand selected, blended together and placed into older French oak barrels where they further developed and matured over next 10 months.
