2008 Gravity (08010)

Our 2008 Gravity Pinot Noir, like all our wine, is made with 100% hand picked grapes. Picked in late September, the grapes were hand sorted, gently destemmed, and left as whole berries as they were gravity fed to open top fermentation tanks. The grapes then spent between 5 and 7 days cold soaking extracting colour, flavours and tannins from the skins before being inoculated using a blend of wild yeast and selected yeast strains. During the course of fermentation the tanks were hand plunged 4 times a day to further the extraction of colour and flavour.

Post fermentation saw the wine gravity flow transferred off the skins into 100% French oak barrels with about 25% being new barrels. Aging then took place from late October through to July, at which time the Pinot Noir barrels most representative of the Gravity style were chosen for the final blend.
