All fruit was hand-harvested between Sept 16 & Oct 1, sorted and whole-bunch pressed to yield the most pure juice. A cold fermentation with a variety of yeast strains allow the citrus & grapefruit notes to shine. The batches were stopped at the ideal sweetness level to ensure a balanced wine.
