2007 Sweet Revenge Vidal Icewine (07006)
Grapes were picked during the cold spell we experienced early in January 2008 when the temperature dropped to below -10°C. The frozen Vidal grapes were whole cluster pressed with a wooden basket press and the precious syrupy juice was collected at 36.5 Brix.
The juice arrived at the cellar on the 10th of January and was gravity fed into a stainless steel tank where it was cold settled for 11 days, racked, the clean juice warmed and inoculated with the yeast strain EC1118.
A cool fermentation at 15°C followed. After the completion of fermentation, untoasted oak chips were added to increase mouth feel and roundness. The wine was stabilized, racked and filtered before bottling in June 2008.
Pale straw colour. Well balanced with hints of passion fruit. Intense fruit and sweetness with a refreshing acidity.
